100% Savagnin from several parcels, planted on predominantly marl soils and in conversion to organic farming. Vinification: after direct pressing, the wine is matured 12 months in vats and then three years sous voile (or under a ‘veil’ of flor) in 228-liter barrels. It is therefore a cuvée made in the oxidative style, without any topping up of the barrel. Fumey Chatelain is a husband and wife team - Raphael Fumey and Adeline Chatelain, who tend about 17 hectares of vineyards in the Jura subregion of Arbois. Thirty years ago they were solely grape-growers but after the devastating frost of 1991 left them with only a tiny crop to sell they decided to make the wine themselves, and have not looked back since.
