NV Chavost Blanc d'Assemblage Brut Nature

This even split of Chardonnay and Pinot Meunier from Champagne Chavost hails from a cooperative winery within the village of Chavot. The Blanc d’Assemblage is a lively Champagne with zero additives or sulfur of any kind.

Champagne Chavost was founded in 1946 by a group of around 20 growers, and initially the fruit was sold off to other houses. The co-op is now comprised of holdings of over 70 multi-generational growers. Initially the fruit was sold off to larger champagne houses until Fabian Daviaux took over, when he urged the growers to create a range of wines without any additives or sulfites and sell them under their own label. This was considered an extremely high risk move in the region, especially among the co-ops old school growers, and we're the better for it.
